High Trenhouse Bobotie

Bobotie is the national dish of South Africa.  It is a tasty mixture of mildly curried mince with a golden savoury custard topping, not dissimilar to moussaka.

  • 2 slices white bread crusts removed
  • 300 ml milk
  • 2 onions
  • 450 gr minced beef
  • 1 large aubergine
  • 2 tbls olive oil
  • 2 tbls curry powder
  • 1 juice of lemon
  • 1 tbls apricot jam
  • 2 tbls peach chutney
  • 1 tbls sugar
  • 1 tbls white wine vinegar
  • 1 tin tomotoes (400 gr)
  • 1/2 tbls tomato puree
  • salt and freshly ground black pepper to taste
  • pinch of dried herbs
  • 2 eggs
  • 4 bay leaves
  • pinch of nutmeg
  • 50 gr flaked almonds
  1. Soak the bread in the milk. Peel and finely chop onions and garlic. Coarsely grate the aubergine without peeling it.

  2. Heat the oil in a large frying pan. Add the onions and garlic and cook them over a low heat until the onions is soft and transparent. Raise the heat and add the meat, stirring it over a high heat until the meat is well browned. Add the aubergine and curry powder and stir over a medium heat for 3 mins to release the flavours of the curry and soften the aubergine. Add the lemon juice, apricot jam, peach chutney, sugar and vinegar; mix in the tomatoes and tomato puree and season with salt and pepper. Mix in the herbs and simmer for 3 mins.

  3. Squeeze the excess milk out of the bread and add the bread to the meat, mixing well to break up the bread. Simmer for 5 mins. Beat the eggs with milk and season the custard with salt and pepper and nutmeg. Spoon the meat mix into a shallow baking dish and pour over the custard. Press the bay leaves into the mix sideways so that they stick up through the custard and sprinkle with almonds.

  4. Bake in a moderate oven 180c /350f/gas 4 for about 40mins or until custard is set.

The Yorkshire Dales are justly famous – upland moors and river valleys provide excellent terrain for walking or touring. For the adventurous there are fine caving areas and challenging rock climbs. Walk north from High Trenhouse and you might not see anyone all day. Walk south and you easily reach the popular village of Malham and a little further, the small market towns of Skipton or Settle, both, incidentally, on the world famous Settle-Carlisle railway.

The Pennine Way passes within a mile along the shores of Malham Tarn and the Pennine Bridleway is also close by. For walking, cycling, trekking, touring the dales, nature studies, painting or just sitting around and reading – High Trenhouse is the ideal venue.

High Trenhouse in National Finals

Hospitality team members, Lorna and Meg, attended the Hotel Reservation Service (HRS) awards lunch in London earlier this year.  HRS makes annual awards in a number of categories and High Trenhouse were finalists for “Excellence in Meetings”.  This award takes into account enquiry tracking, customer liaison and feedback, follow-through and business results. The High Trenhouse case study explained how pro-active response to an initial enquiry snowballed through visits and co-development through to successful events leading to repeat business well into the future. Meet The Team

John Varney, Managing Director, bought High Trenhouse, a rundown traditional upland farmstead, in 1976 to create a place for people to learn and develop.  It has evolved into an exceptional residential venue for management retreats, leadership development, strategic thinking and leisure groups.

John’s wife, Bernadette, has cultivated an ambience of warm hospitality that encourages safe interaction.  “When people feel they are with friends in the country”, says Bernadette, “they can let go and rediscover meaning”.

Goat’s Cheese, Potato & Onion Quiche

The perfect tart, easy to make, looks stunning and tastes wonderful

About 1 hour – Serves 6

250g/ 9oz short crust pastry, fresh or frozen

25g/1oz butter

1 tbsp olive oil

2 onions, sliced

1 medium potato, peeled and sliced

2 garlic cloves, crushed

2 tbsp fresh thyme leaves

140g/5oz goat’s cheese, broken into pieces

3 eggs

200g/8oz-carton crème fraiche

Rocket leaves to serve – optional

 

  1. Heat oven to 190C/fan 170C/gas 5
  2. Roll out the pastry so it is large enough to fit a deep 23cm loose-bottomed tart tin, then line the tin with the pastry. Chill for 30 mins. Line the pastry with greaseproof paper, fill with baking beans and bake for 15 mins. Remove the paper and beans and return the tin to oven for 5 mins until golden, then remove and set aside. Reduce oven to 180C/ fan 160C/ gas 4
  3. Heat the butter and oil in a large frying pan, add the onions and potato and cook over a gentle heat for 10 to 15 mins, turning occasionally until golden and tender. Season, then add the garlic and thyme leaves and cook for a further 3 mins. Tip into the pastry case, cover with goat’s cheese and spread out evenly.
  4. Whisk the eggs and crème fraiche together, season then pour into the case and bake for 30 to 35 mins until lightly brown and just set in the centre. Serve warm with Rocket Leaf salad.
